The Perfect Bread Recipe

I just want to let y'all know that there is an updated version of this recipe {along with a much better photo} over on my new blog. The new blog has a new post every weekday and is all about healthy, sustainable living and eating, a smattering of travel, and some great music.


...well perfect if you love Honey Wheat!  This is my dad's homemade bread recipe.  It is pretty much my favorite bread in the world so I though I'd share the recipe with y'all!  

Whole Wheat Honey Bread
yield:  1 loaf


Ingredients:
1 pack of Fleshmanns Active Yeast
1 tsp sugar
1/4 cup water (between 100-110 degrees F)
4 cups of whole wheat flour
1 1/4 tsp salt
1/4 cup flax seeds
1/2 cup honey
1 cup unsweetened applesauce

Instructions:
Proof the yeast according to the package and let sit for about 10 minutes or until it doubles in size.  You will use the sugar and the water in this step.

In a large bowl, combine the whole wheat flour, flax seeds, and salt.

When the yeast is finished proofing, add it to the flour mixture. 

Whisk honey and applesauce until combined in a 2 cup liquid measuring cup and microwave until lukewarm.
Add to flour mixture.

Stir all ingredients together until it starts to form a ball.  At this point, transfer it to a plastic pastry mat.  

Knead dough for about 6-8 minutes.  The dough should be smooth and elastic.  Form it into the shape of a loaf.

Spray all sides of loaf pan and place your loaf in there to rise.  Cover with a towel and let rise for 2-3 hours (or until it is a couple inches above the pan).

Preheat the oven to 350.  Bake for 23 minutes.  Then, using aluminum foil, tent the loaf and bake for an additional 23 minutes.

Remove, cool, and enjoy!

I enjoy mine toasted with a little butter and honey.  =)
